Jasonia Saison: Hennepin Clone in an Ice Bucket

Jason M took the plunge this weekend and got married to his lovely wife Sonia. Since we are both home brewers we wanted to infuse a little of our skill into the overall wedding and brew beer tailored for the wedding, something that we would both enjoy and the guests would also find tasty. Also this was going to be a summer wedding so we wanted to brew beers that would be great to have during a hot day all gussied up in our Sunday best, so we eventually agreed on an IPA and a Saison. Jason chose to go with a Pliny clone recipe and I chose to go with a Hennepin clone recipe I cobbled together over different forums and webpages.

The Hennepin clone was so well received that I wanted to share the recipe with everyone else. Jason’s Pliny clone was touched on in his post My Wedding Beer Brew Day – Pliny The Elder Clone to which he will be writing update soon! Today I present my recipe, the Jasonia Saison (yes its a mash-up of Jason and Sonia)

8 lbs 8.0 oz Pilsner (2 Row) Bel (2.0 SRM) Grain 65.40%
3 lbs 8.0 oz Pale Malt (2 Row) Bel (3.0 SRM) Grain 26.90%
1 lbs Candi Sugar, Clear (0.5 SRM) Sugar 7.70%
1.00 oz Styrian Goldings [5.40 %] – Boil 60.0 min Hop 10.4 IBUs
0.25 oz Nugget [13.00 %] – Boil 60.0 min Hop 10.5 IBUs
1.00 tsp Irish Moss (Boil 15.0 mins) Fining
0.50 oz Saaz [3.00 %] – Boil 15.0 min Hop 2.4 IBUs
1.00 oz Crystalized Ginger (Boil 12.0 mins) Herb
1.00 oz Orange Peel (Boil 12.0 mins) Spice
1.0 pkg Belle Saison (Danstar #) Yeast
Mash temp: 154 for 60 minutes (fly sparge)
Fermentation: 1 week Secondary Fermentation: 2 weeks
Final Gravity 1.008
ABV 7.5
IBU 24

Notes: 1) I added the Nugget out of necessity because the Styrian Goldings were only about 3.5% AA. So on brew day I grabbed some Nugget I had stashed away in the freezer, calculated what I needed to bring me up to my target IBU and tossed it in. 2) I over-boiled and ended up with 4 gallons of wort, so added 1 gallon of tap water and reached an OG of 1.065

Verdict: If you put Hennepin and Jasonia side by side, you’d be hard pressed to pick out the homebrew. I’m serious this beer was fantastic, if you try it let me know and leave a comment below.
